Yay! First time baking hubby's Hari Raya favourite, snow cookies! Or commonly known as cornflakes meringues/macaroons... The recipe belongs to his aunt and I modified it a little by topping it with strawberry choc chips... Crunchy on the outside, chewy on the inside :-)
4 egg whites
300g fine sugar
2 tbsp corn flour
1/2 tsp vanilla powder
100g crunched cornflakes
50g chopped almonds
Chocolate chips / Strawberry chips / etc...
55-60pcs mini cupcake casings
1) Preheat oven to 150 degrees Celsius.
2) Whisk egg whites till stiff peaks form & whisk in sugar gradually.
3) Whisk in corn flour & vanilla powder.
4) Gently fold in cornflakes & almonds, mixing thoroughly.
(You can add in chocolate chips at this point too..)
5) Scoop 1tsp of cornflakes mixture into mini cupcake casings & top with your desired toppings.
6) Bake for 20mins until slightly browned.
7) Serve when cooled :-)

Wedding Cupcakes Galore!
Managed to dig out some photographs of cupcakes I've done for weddings... Really miss those wonderful times.. Hopefully I can get back to doing it again after I give birth next year! :-)

One of Hari Raya's must-haves.. Honey Cornflakes!
Yes... The title of this post says it quite appropriately... Definitely in my list of favourite Hari Raya goodies... The recipe I used is my own modified version which requires no baking at all... Simple and easy to make!
50g butter
1 tbsp sugar
3 tbsp of honey
3 cups of cornflakes
Toppings: hundred thousands/choc rice/chopped cherries/etc...
50pcs mini papercups
1) Melt butter, sugar & honey in a frying pan under low heat until frothy...
2) Add in the cornflakes & continue to mix thoroughly under low heat..
3) Switch off the heat & quickly scoop 1tsp into each mini cups while it is still warm..
4) Top with your desired choice of toppings...
5) Let it cool for awhile to harden & voila! It's done :-)
Notice that I used a significant amount of honey... The honey makes it sticky & will harden with the sugar once it is cooled.. Hence no baking needed... And personally I think it tastes nicer when unbaked...

More Cupcakes Please....
my elder sister´s birthday is just around the corner... and so she requested that i bake some birthday cuppies for her... and i sure did! anything for my dear darling sister :-) a star-themed chocolate cupcakes with cream cheese icing....
